Pimm’s No. 1 is a gin-based potation made in England from dry gin, liqueur, fruit juices, and spices. Served with lemon soda or ginger ale, it becomes a Pimm’s Cup. Pimm’s No. 1 was created in the mid-18th century by English oyster bar owner James Pimm. The recipe is still a secret; supposedly, only six people know exactly how it is made.
The Oyster House chain was sold and Pimm’s Cup products Nos. 2 to 5 were phased out due to reduced demand in 1970 after new owners The Distillers Company had taken control. The Distillers Company was subsequently purchased by Guinness PLC in 1986 and Pimm’s became part of Diageo when Guinness and Grand Metropolitan merged in 1997.
We set out to create an extraordinary cocktail experience that would delight the senses. Micro-distilled in small batch copper-pot stills, Empress 1908 is handcrafted using eight carefully selected botanicals. It is characterized by a high rye content for a bourbon (at approximately 28% of the mash bill) and being aged at least six years. It is bottled at 45% abv (90 proof) for the US, Canadian, British, Dutch and Mexican markets. For Australian and Danish markets, it is bottled at 40% abv. It is also sold in Germany, Norway and Sweden.
